Wahoo, called ono in Hawaiian, which translates roughly to 'delicious' are one of the fastest fish in the Pacific. They hit hard, run fast, and if you are not ready when the line goes tight, you will be watching them disappear into the blue before you can react.
Off the Kona coast, wahoo are an extended season species. They show up in May and stay consistent through October, with the peak bite running through the summer months when warm water pushes bait schools close to the surface. During that window, a dedicated wahoo spread -- high-speed trolling with lures and rigged baits just below the surface -- can produce multiple fish in a single morning.
Wahoo are also one of the better table fare species in Kona waters. Clean white meat, mild flavor, and they freeze well and make excellent fish tacos, which is why guests who land one are usually already planning how they are going to eat it before the boat is back at the dock.
